Ume Leaf and Wasabi Leaf Okaki Production Process
                                                 
Ume Leaf (pickled plum) and Wasabi Leaf (Japanese horseradish) Okaki
are made using Uruchi rice dough from Yamagata prefecture, an area
famous for its high-quality "Shonai Rice".
                                                                                   



The Okaki artisan lines the dough
by hand in the special frame; a
very time-consuming and intricate

The oven is extremely hot and is
non-adjustable. >

A special plate is installed in the
oven.  This plate is one of only
three plates that exist in Japan.< 
   
 





A large blender is used to delicately, consistently season the Okaki without
